Give Thanks

Now that the Christmas season is officially underway, I think it is about time to wrap up the Thanksgiving holiday.

A little Craft project I made with my sister.


The Wednesday before Thanksgiving, my family headed up to the Silverado Lodge at the Canyons Resort to spend the night. It was fabulous if I do say so myself. My dad rented us each some fancy smanshy condos where we ate Chinese food, played games and hot-tubbed (it was more luke-warm than hot, but we still fun!).

Owen cried for 2 1/2 hours in the middle of the night, which was mildly reminiscent of last year. I remember waking sometime between 4 and 5 am to walk the hotel halls with that boy. We finally banned ourselves in the hotel gym where we slobbered on equipment while I prepared for the upcoming feast. This year, he slept until 7 am at least, but I was still tired from the middle of the night wake-up call.

Thanksgiving day we drove back down the canyon to Joey's mom's house for quiche, sweet rolls and ham with Joey's family. As you can see, it was a full house:


What was I thankful for on Thanksgiving?

Above all, my family. I love being with my siblings and parents. They are my greatest friends and support. Owen keeps me on my toes and is constantly reminding me I don't have it all figured out. I probably would become pretty complacent without that boy and he loves me in spite of my many shortcomings. Joey is the best - without his humility, hard work and love we wouldn't be a family today. Enough said.

This particular Thanksgiving, I was thankful to be up and about and no longer hobbling around like an old man. I had kidney surgery the week before and felt like an invalid. It wasn't really surgery in the sense that no needles were used, but that is how the hospital and docs refer to it - and with a $5000 price tag, I'm calling it surgery. I am no longer walking hunched over and most of the stone fragments have left my body. The procedure went relatively well. I was even greeted at the hospital by my medical student neighbor who ended up being the "physician" who checked me in.

The biggest setback of the experience was that I responded poorly to the anesthesia. I couldn't move, turn from one side to the other, stand up or walk without vomiting. I became dehydrated pretty quickly, so we had to stay at the hospital a little longer than I would have liked. If the nurse had been smarter, she would have given me anti-nausea medicine, or fixed the kink in my IV as Joey had suggested, but instead she discharged us and sent us on our way. Lucky for Joey - he got to see me throw up at least 10 times before we made it home.

After a late-night call to the doctor, one anti-nausea suppository, a wonderful nights rest at my parents house, life started to look up.

I am now doing great and am thankful that the human body is resilient. Our family certainly has had a few exciting weeks, but isn't that what the holidays are about?

Missy (Joey's sister): "Why?"

Meg: "Because Heavenly Father is nice to adults. He doesn't want them to have to take care of kids all the time."

That would also explain naps and babysitters.

And So it Begins . . .

Tonight, Owen walked out of my bedroom, pointed back into the room and said very loudly, "Uh, oh." He then waved his finger in the air with pursed lips and said, "No, no, no, no, no."

Great. Not only has he done something wrong, but he knows it. I asked him to take me and show me what he had done. He walked me around to the side of the bed, picked up a red marker and then pointed at the design he had just made on our sheets. Again, he said, "Uh, oh." Our plain ivory sheets are not so plain.

It is very hard to discipline someone when you are laughing. Similar to last week when I could tell Owen was not taking a nap by the amount of noise I heard coming from his room. I walked into his bedroom to find him sitting on top of his bookshelf, NOT in his crib where he should have been and where I placed him minutes prior.

And so it begins.

Pumpkin Gooey Butter Cake

What's not to love about Paula Deen? She is always happy, is completely comfortable in her own skin and makes deliciously sinful food. My sister made her pumpkin cake for our Thanksgiving dessert and it was fabulous. I thought I would share some of the goodness.

One comment: the recipe says it serves 6. I had to laugh. Anyone that knows me knows that I can hold my own as far as desserts go. I mean, I could easily finish a large blizzard and still feel a little jipped. But, this dessert is rich! The 13" X 9" pan can easily serve 16. Ah, I guess that is why Paula is always smiling.

Pumpkin Gooey Butter Cake
Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg
Preheat oven to 350 degrees F.

Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

Competition

Owen loves watching me bake. He stands on a stool and does an excellent job of turning the mixer on and off at my request. While making my latest creation, I turned around from putting the pans in the oven to find Owen with his lips sealed on the mixer bowl and the spatula in his hand. Looks like I am going to have some competition for the best part of cake-baking.

Potty Mouth

We had plans to gather as a Wilson clan to celebrate my brother-in-law Sam's 40th birthday on Sunday. We were assigned the dessert and I didn't think it was appropriate to come without a cake. Despite being in pain and having difficulty standing, I was determined to do it with style.

With the cake and mint brownies complete, we headed out of our apartment. I herded Owen along with the cake balanced on one arm and the brownies in the other. Joey followed carrying a road bike. We walked to the elevator and I manned the buttons with my elbows. Owen did his usual dancing and jumping in the elevator. We arrived at the 1st floor without a hitch until Owen placed his hand on the opening elevator door which sucked it in with it as it opened. Owen screamed. Joey cried "Oh no!" and a lovely four letter expletive left my mouth. (I'm still not quite sure how it is a word that is not part of my vocabulary is the first one to come out at a time like this, but it was embarrassing to say the least. I still remember thinking "I wonder which of my neighbors was lucky enough to hear me yell that?!)

I threw the brownies and cake in the air and pushed the elevator door "open" button as Joey vigorously yanked on Owen's arm. It came out, but not without a lot of moans and whales.

Owen survived. Remarkable, the cake did too (for the most part). We flipped the cake bake onto its plate and headed out the door.

Christmas Toys

You know your mom bakes too many cakes when one of your favorite toys is an attachment to her KitchenAid mixer.

You know your dad is a gEEk when your other favorite toy is a random Electrical Engineering device from the storage closet.


You know it is time for Christmas when the best thing you can find to play with today is a mixing bowl. Poor Owen.

A Roarin' and Rockin' Halloween

My boys were a lion and a skeleton rocker respectively. Owen, the lion, enjoyed chasing the children as our community walked through the apartment buildings. He thought that people opening the door to give a treat was actually an invitation to come in and play. He was a bit disappointed all he got was candy. Joey was a bit disappointed I never wore his wig (he settled for a few friends and the Bishop) and failed to follow through on my Shera costume. Maybe next year.
